Old, extinct volcanoes dot the landscape, contributing to the fertile volcanic soil ideal for coffee cultivation.\u003c\/p\u003e\n\u003cp\u003eThe region's humid climate, coupled with significant rainfall, nurtures the coffee plants. Thankfully, during coffee harvest, the weather remains predominantly dry.\u003c\/p\u003e\n\u003cp\u003eTraditional varieties, including Pluma Hidalgo, Arabica Tipica, and Bourbon, are still grown in this region. Smaller farms with efficient washing and sun drying facilities are common. It's customary for farmers here to thoroughly sort their coffee during the wet milling process, which results in beautifully processed parchment coffee.\u003c\/p\u003e\n\u003cp\u003eFrom January to March, the main harvest season, the coffee beans are sun-dried, enhancing the coffee's flavour.
